Mini Chocolate Chip Cookie Muffins
Don’t these look delicious?
I adapted them from Martha Stewart‘s Skillet Baked Chocolate Chip Cookies.
You will need,
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
1/2 cup sugar
3/4 cup brown sugar
1 large egg
2 teaspoons vanilla extract
1 1/2 cups chocolate chips
Step 1: Place 2 cups of flour into a medium sized bowl.
Step 2: Add 1 teaspoon baking soda.
Step 3: Then add 1/2 teaspoon salt.
Mix all three ingredients together with a whisk.
Step four: Using an electric mixer, cream 3/4 cup butter until smooth.
Step 5: Add to the butter 1/2 cup sugar.
Step 6: Then add 3/4 cup brown sugar.
Mix the butter and sugars until smooth.
Step 7: Add 1 large egg to the butter and sugar mixture.
Step 8: Then add 2 teaspoons vanilla extract.
Mix until well blended.
Step 9: Add the flour mixture into the butter mixture.
Mix until combined.
Step 10: Add 1 1/2 cups chocolate chips and stir.
Step 11: Scoop spoonful of the cookie dough into greased mini muffin cups. Bake at 350 Fahrenheit for about 15 minutes or until golden brown.
Step 12: When finished, remove from the muffin pan and cool on a cookie rack.
These taste best when warm!
