No-Bake Cheesecake
This no-bake cheesecake is delicious and so quick and easy to make!
The filling is from Martha Stewart Kids and the gram cracker crust is from The Fannie Farmer Cookbook. I used Fannie Farmer’s crust because it used less butter.
You will need,
For the crust,
1 1/2 cups gram cracker crumbs
1/3 cup sugar
1/3 cup butter, melted
For the filling,
2 8-ounce packages cream cheese, softened
1 14-ounce can sweetened condensed milk
1 teaspoon vanilla extract
1/4 cup fresh lemon juice
Step one: In a bowl, put 1 1/2 cups of gram cracker crumbs and 1/3 cup sugar together.
Step two: Add 1/3 cup melted butter.
Step three: Mix all three ingredients together.
Step four: Press the crumb mixture into a 9 inch springform pan. Put the gram cracker crust into the freezer for at least 10 minutes.
Step five: Put the 2 8-ounce softened packages of cream cheese into a bowl. Beat the cream cheese until smooth.
Step six: In small batches, add the sweetened condensed milk. Stir well in between batches.

Step seven: Add 1/4 cup fresh lemon juice and 1 teaspoon vanilla extract. Mix well.
Step eight: Pour the filling into the chilled crust. Smooth over with a spatula. Refrigerate for at least 3 hours.
